  • ⅓ cup packed brown sugar

  • 1 cup semi-sweet chocolate chips

Instructions

  1. Preheat oven to 350°F (175°C) and grease a 9×5 inch loaf pan.
  2. Wash, trim, and grate the zucchini. Squeeze out excess moisture firmly with hands or a towel until damp but not dripping.
  3. In a large bowl, whisk together vegetable oil, granulated sugar, eggs, and vanilla extract until smooth.
  4. In a separate medium bowl, whisk together flour, baking soda, and salt.
  5. Pour dry ingredients into wet ingredients and stir gently until just combined. Do not overmix.
  6. Fold in the squeezed zucchini and chocolate chips (tossed in a teaspoon of flour to prevent sinking).
  7. Spread half the batter into the prepared pan. Sprinkle half of the mixture of brown sugar and cinnamon over the batter.
  8. Dollop remaining batter on top and gently swirl the cinnamon layer into the batter with a knife.
  9. Bake for 50-60 minutes, or until a toothpick inserted into the center comes out clean.

Notes

Squeeze the zucchini thoroughly to remove excess water to prevent soggy bread. Do not overmix the batter to ensure a tender texture. Tossing chocolate chips in a little flour helps them stay suspended in the loaf. Store in an airtight container at room temperature for up to 3 days, or freeze for up to 3 months.
