  • 14 ounces (397g) sweetened shredded coconut
  • ¼ cup (60ml) pure maple syrup
  • 2 tablespoons (30ml) full-fat coconut milk
  • 1 teaspoon vanilla extract
  • ¼ teaspoon salt
  • 1 cup (170g) dark chocolate chips or bars (vegan)
  • 1 tablespoon coconut oil (optional)
  • Flaked sea salt (for topping)

Instructions

  1. Preheat oven to 325°F (165°C) and line a baking sheet with parchment paper.
  2. In a mixing bowl, whisk together maple syrup, coconut milk, vanilla extract, and salt until well blended.
  3. Add the sweetened shredded coconut to the wet ingredients and stir until evenly coated. The mixture should resemble damp sand.
  4. Drop mounds of the coconut mixture onto the prepared baking sheet using a tablespoon or small ice cream scoop, leaving 2 inches between each. Press tops gently to create a dome shape.
  5. Bake for 15-18 minutes until edges are golden brown and tops are slightly crisp. Rotate pan halfway through.
  6. Let macaroons cool completely on the baking sheet for at least 10 minutes.
  7. Melt dark chocolate chips and coconut oil in a microwave-safe bowl in 30-second intervals, stirring until smooth.
  8. Dip half of each cooled macaroon into the chocolate, let excess drip off, and place back on parchment paper.
  9. Sprinkle with flaked sea salt immediately while chocolate is wet.
  10. Let chocolate set at room temperature for 10 minutes or in the fridge for 5 minutes.

Notes

Use sweetened shredded coconut for the correct texture; unsweetened coconut will result in bland macaroons. Ensure macaroons are completely cool before dipping to prevent chocolate from sliding off. Store in an airtight container at room temperature for up to 3 days, or freeze for up to 3 months.
