A hearty, crowd-pleasing dish featuring crispy oven-baked fries topped with spicy ground beef chili, melted cheddar and mozzarella cheese, and cool sour cream. Perfect for entertaining and game day.
Ingredients
- 3 lbs Yukon Gold potatoes, cut into 1/2-inch batons
- 3 tbsp high-oil olive oil
- 1 tsp smoked paprika
- 1 tbsp kosher salt
- 1 lb lean ground beef (80/20)
- 1 large yellow onion, diced
- 4 cloves garlic, minced
- 2 cans (28 oz total) tomato sauce
- 2 cans (15 oz each) black beans, rinsed and drained
- 2 tbsp chili powder
- 1 tbsp ground cumin
- 2 cups sharp cheddar cheese, grated
- 1 cup mozzarella cheese, shredded
- 1/2 cup sour cream
- 4 stalks green onions, sliced
Instructions
- Preheat oven to 425°F (220°C). Line two large baking sheets with parchment paper.
- Scrub potatoes clean and cut into uniform 1/2-inch batons. Toss in a large bowl with olive oil, smoked paprika, and salt until evenly coated.
- Spread potatoes in a single layer on baking sheets, ensuring they do not touch. Bake for 20 minutes, then flip and bake for another 15-20 minutes until golden and crispy. Reduce oven temperature to 400°F (200°C).
- While fries bake, heat a large skillet over medium-high heat. Sauté diced onion for 3-4 minutes until translucent, then add garlic and cook for 30 seconds.
- Add ground beef to the skillet, breaking it up with a spoon. Cook for 5-7 minutes until no pink remains. Drain excess grease if necessary.
- Stir in chili powder, cumin, and a pinch of salt. Cook for 1 minute to toast spices. Add tomato sauce and black beans. Simmer uncovered on medium-low for 15-20 minutes until thickened. Adjust seasoning to taste.
- Spread crispy fries on a serving platter or baking sheets. Sprinkle cheddar and mozzarella evenly over the hot fries.
- Return to the 400°F oven for 3-5 minutes until cheese is melted and bubbly.
- Remove from oven and immediately ladle hot chili over the cheesy fries. Top with sour cream and sliced green onions. Serve immediately.
Notes
Do not overcrowd the baking sheet to ensure fries crisp up rather than steam. For best results, grate your own cheese as pre-shredded cheese contains anti-caking agents that prevent smooth melting. Keep fries warm in the oven while finishing the chili to maintain crispiness. Store chili and fries separately in the refrigerator; reheat fries in the oven to restore texture.
