Description
A cozy, festive fall brunch drink featuring homemade spiced pear syrup mixed with champagne or prosecco. This easy-to-make cocktail captures the essence of autumn with warm spices and fresh orchard fruit flavors.

- 4 medium pears (Bosc or Anjou), cored and chopped
- 2 cups unfiltered apple cider
- 1 cup water
- 2–3 star anise pods
- 1 large cinnamon stick
- 3–4 whole cloves
- 1/4 teaspoon freshly grated nutmeg
- 1 teaspoon pure vanilla extract
- 1/2 to 3/4 cup sugar (adjust to taste)
- 1 bottle Champagne or Prosecco (Brut or Extra Dry)
- Sparkling apple juice (optional, for non-alcoholic version)
- Garnishes: thin pear slices, cinnamon sticks, or rosemary sprigs
Instructions
- Wash pears thoroughly. Core and chop into rough 1-inch chunks; skins can be left on for color.
- In a medium saucepan, combine chopped pears, apple cider, water, star anise, cinnamon stick, cloves, and nutmeg.
- Bring the mixture to a boil over medium-high heat, then reduce heat to low and simmer gently for 15 minutes until pears are soft.
- Remove from heat and mash the pears into a pulp using a masher or potato ricer.
- Stir in vanilla extract and sugar. Taste and adjust sweetness if needed. Let sit for 5 minutes to infuse.
- Strain the mixture through a fine-mesh strainer into a bowl or jar, pressing on solids to extract liquid. Discard solids.
- Let the syrup cool completely to room temperature.
- To serve, add 2-3 tablespoons of spiced pear syrup to a champagne flute.
- Top with chilled champagne or prosecco and stir gently.
- Garnish with a thin pear slice, cinnamon stick, or rosemary sprig and serve immediately.
Notes
The syrup can be made up to 2 weeks in advance and stored in the refrigerator. It can also be frozen for up to 3 months. For a non-alcoholic version, substitute champagne with sparkling apple juice. Chill all ingredients before assembling for the best flavor and carbonation.
