  • 2 tbsp fresh lime juice
  • 1/4 cup packed fresh cilantro, chopped
  • 1/2 tsp chipotle powder
  • 1 tbsp olive oil
  • 1/2 tsp salt (adjust to taste)

Instructions

  1. Prep the vegetables: Wash and chop the green bell pepper into rough chunks. Finely dice the white onion and mince the garlic cloves.
  2. Combine ingredients: Place the chopped green bell pepper, white onion, garlic, drained canned green chilies, cilantro, lime juice, olive oil, chipotle powder, and salt into a food processor.
  3. Pulse and blend: Pulse the food processor 10-15 times until the vegetables are chopped but still chunky. If the mixture is too thick, add a tablespoon of water or more lime juice. For a smoother texture, blend for an additional 30 seconds.
  4. Taste and adjust: Taste the salsa and adjust seasoning. Add more salt if bland, more lime juice if flat, or more chipotle powder for extra smoke. Aim for a flavor slightly stronger than desired, as it will mellow.
  5. Chill and serve: Transfer the salsa to a serving bowl or airtight container. Refrigerate for at least 10 minutes to allow flavors to meld before serving.

Notes

For best flavor, let the salsa rest in the fridge for at least 30 minutes before serving to allow the raw onion and garlic bites to mellow. If the salsa is too watery, ensure you drain the canned chilies well. To reduce the raw onion bite, soak diced onions in cold water for 10 minutes before blending.
