Instructions

  3. Toss peaches with sugar, cinnamon, and cornstarch. Gently mash about half the slices with a fork to release juices. Let sit for 5 minutes.
  4. In a small bowl, whisk together flour, baking powder, and a pinch of salt.
  5. Add melted butter and vanilla extract to the flour mixture. Stir with a fork until it resembles coarse crumbs.
  6. Spoon the topping mixture over the peaches, leaving it uneven and rustic. Optionally sprinkle with extra sugar crystals.
