This effortless slow cooker pork roast features tender, fall-apart meat coated in a glossy, sweet-savory apple cider glaze. It requires minimal prep time and delivers maximum comfort for busy weeknights.

- 3–4 pounds pork shoulder roast (or butt)
- 2 cups 100% apple cider
- 1 tablespoon dry mustard
- 1 teaspoon garlic powder
- 1 teaspoon onion powder
- 1 teaspoon ground cinnamon
- Salt and black pepper (to taste)
- 3 medium firm apples (Honeycrisp, Fuji, or Braeburn), sliced into wedges
- 2 tablespoons maple syrup (for glaze)
- 1 tablespoon apple cider vinegar (for glaze)
- 1 tablespoon butter (for glaze)
- 1 tablespoon flour or cornstarch (for glaze)
Instructions
- Pat the pork shoulder dry and trim excess fat. Season generously with salt and pepper.
- Heat oil in a skillet over medium-high heat. Sear the pork on all sides for 2-3 minutes per side until browned. Remove and set aside.
- Slice apples into quarter-inch wedges and spread them evenly in the bottom of a 6-quart slow cooker.
- Place the seared pork on top of the apples.
- In a bowl, whisk together apple cider, dry mustard, garlic powder, onion powder, and cinnamon. Pour over the pork.
- Cover and cook on LOW for 6-8 hours or HIGH for 4-5 hours, until pork is fork-tender.
- Remove pork to a cutting board and tent with foil. Pour cooking liquid into a saucepan and skim off excess fat.
- Whisk flour or cornstarch with a little cold water to make a slurry. Stir into the simmering liquid and cook until thickened.
- Stir in maple syrup, apple cider vinegar, and butter to create the glaze.
- Slice or shred the pork and serve drizzled with the warm glaze and apples.
Notes
Do not skip searing the pork for better flavor. Use firm apples that hold their shape. Pork is safe at 145°F but should reach 190-200°F for fall-off-the-bone tenderness. Leftovers keep in the fridge for 3 days or freeze for 3 months.
