Ingredients
- 2 cups strong coffee (dark roast or espresso)
- 1 cup milk (whole, oat, or almond)
- 2 tablespoons pure pumpkin puree
- 1 teaspoon pumpkin pie spice
- A tiny pinch of salt
- 2–3 tablespoons caramel sauce
- Flaky sea salt (for topping)
- Whipped cream (optional)
Instructions
- Brew strong coffee and keep it hot.
- In a saucepan over medium heat, combine milk, pumpkin puree, pumpkin pie spice, and a pinch of salt.
- Whisk constantly until the milk is hot, steaming, and the pumpkin is fully dissolved and smooth (do not boil).
- Remove from heat and stir in 2 tablespoons of caramel sauce until dissolved.
- Pour hot coffee into a large mug.
- Slowly pour the pumpkin-spiced milk over the coffee.
- Froth the milk mixture if desired, or pour gently to create layers.
- Drizzle with additional caramel sauce, top with whipped cream (optional), and sprinkle with flaky sea salt.
- Serve immediately.

Ensure you use 100% pure pumpkin puree, not pumpkin pie filling, to avoid excessive sweetness. Whisk the pumpkin thoroughly to prevent clumps. For a lighter version, use unsweetened almond milk and reduce caramel sauce. The drink is best made fresh but the milk mixture can be stored in the fridge for up to 2 days.
