  • 32 ounces frozen butternut squash cubes (or fresh 1-inch cubes)
  • 1 pound Italian sausage (spicy or mild), casings removed
  • 1 medium yellow onion, diced
  • 4 cloves garlic, minced
  • 2 tablespoons fresh sage, chopped (or 1 tablespoon dried)
  • 1 tablespoon olive oil
  • 2 tablespoons butter
  • 1/2 cup heavy cream
  • 1/2 cup low-sodium chicken broth
  • 1/2 teaspoon red pepper flakes
  • 1/2 cup freshly grated Parmesan cheese
  • Salt and black pepper to taste

Instructions

  1. Preheat oven to 400°F (200°C). Line a baking sheet with parchment paper.
  2. Toss pumpkin cubes with 1 tablespoon olive oil, salt, and pepper. Spread in a single layer and roast for 20-25 minutes until tender and caramelized.
  3. While pumpkin roasts, heat a large skillet over medium-high heat. Add sausage and cook for 8-10 minutes, breaking it up, until browned. Remove sausage and set aside, leaving about 1 tablespoon of fat in the pan.
  4. Reduce heat to medium. Add butter to the skillet. Once melted, add onion and cook for 3-4 minutes until soft. Add garlic, sage, and red pepper flakes; cook for 1 minute.
  5. Pour in chicken broth and simmer for 2 minutes, scraping up browned bits. Add heavy cream and simmer for 2-3 minutes until slightly thickened.
  6. Return roasted pumpkin and cooked sausage to the skillet. Stir in Parmesan cheese until melted and creamy.
  7. Season with salt and pepper to taste. Serve immediately with extra Parmesan and black pepper.

Notes

Roasting the pumpkin concentrates its sweetness. Do not drain all the sausage fat as it adds flavor. Add cheese off heat to prevent graininess. This dish does not freeze well due to the dairy sauce.
