Description
A creamy, no-bake fall dessert that combines spiced pumpkin mascarpone cream with coffee-soaked ladyfingers. It’s rich, comforting, and requires no oven, making it perfect for last-minute entertaining or holiday gatherings.
Ingredients
- 16 oz (450g) mascarpone cheese, room temperature
- 1 cup (240ml) heavy cream, chilled
- 1 cup (245g) 100% pure pumpkin puree
- ½ cup (100g) granulated sugar
- 2 teaspoons pumpkin pie spice
- 1 teaspoon vanilla extract
- 1 cup (240ml) strong brewed coffee, cooled to room temperature
- 2 tablespoons simple syrup (optional)
- 24–30 ladyfingers (savoiardi)
- Unsweetened cocoa powder, for dusting
- Toasted pumpkin seeds, optional garnish
Instructions
- Brew coffee and let it cool completely. Stir in simple syrup if using, then set aside.
- In a large bowl, whip the cold heavy cream until stiff peaks form. Set aside in the fridge.
- In another bowl, beat the room-temperature mascarpone until smooth. Add sugar, pumpkin puree, pumpkin pie spice, and vanilla. Mix until fully combined and creamy.
- Gently fold the whipped cream into the mascarpone mixture using a spatula until just combined and fluffy.
- Quickly dip each ladyfinger into the coffee (1-2 seconds per side) and place in a single layer at the bottom of a 9×13 inch baking dish.
- Spread half of the pumpkin cream over the ladyfingers. Repeat with another layer of dipped ladyfingers and the remaining cream. Smooth the top.
- Cover the dish with plastic wrap and refrigerate for at least 4 hours, or overnight.
- Just before serving, dust the top generously with cocoa powder. Garnish with toasted pumpkin seeds if desired. Slice and serve cold.
Notes
Do not soak ladyfingers for more than 2 seconds or they will turn to mush. Ensure mascarpone is at room temperature to avoid lumps. This dessert tastes best after sitting overnight as flavors meld. It does not freeze well due to texture changes in the dairy. For a lighter version, use half-and-half or oat milk, though it won’t whip as stiffly.
