Description
A cozy, single-serve dessert that yields two generous slices. This moist, tender cake features juicy apple chunks and a subtle spice profile, baked quickly in a 6-inch pan without the guilt of leftovers.
Ingredients
- 100g (3/4 cup) All-Purpose Flour
- 100g (1/2 cup) Granulated Sugar
- 57g (1/4 cup) Unsalted Butter, softened
- 1 large Egg, room temperature
- 150g (1 cup) Apple, peeled and diced into 1/2-inch chunks
- 1 tsp Ground Cinnamon
- 1/4 tsp Ground Nutmeg
- 1 tsp Baking Powder
- 1/4 tsp Salt
- 30ml (2 tbsp) Milk (whole milk or buttermilk)
Instructions
- Preheat oven to 350°F (175°C). Grease a 6-inch round cake pan and line the bottom with parchment paper.
- In a medium mixing bowl, whisk together the flour, baking powder, salt, cinnamon, and nutmeg.
- Add the softened butter and sugar to the dry ingredients. Mix vigorously with a fork until the mixture resembles coarse sand.
- Crack the egg into the bowl and add the milk. Mix gently until just combined, scraping down the sides. Do not overmix.
- Gently fold in the diced apple chunks. Spread the batter evenly into the prepared pan and press the apples down slightly.
- Bake for 20-25 minutes, or until the top is golden brown and a toothpick inserted into the center comes out clean or with moist crumbs.
- Let the cake cool in the pan for 5 minutes, then invert onto a wire rack or plate to cool completely or serve warm.
Notes
Ensure ingredients are at room temperature for better emulsification. Do not overmix the batter to avoid a tough texture. If using a different pan size, adjust baking time accordingly (check at 15 minutes for smaller ramekins). For a crumble topping, sprinkle brown sugar and cinnamon on top before baking.
