  • 1 tsp ground cinnamon (2g)
  • 1/2 tsp baking powder (2g)

Instructions

  1. Preheat oven to 350°F (175°C). Grease a 4-inch ramekin or small loaf pan with butter or cooking spray, or line with parchment paper.
  2. Peel and dice apples into 1/2-inch cubes. Toss with a pinch of cinnamon and pat dry if juicy.
  3. In a mixing bowl, whisk together flour, sugar, baking powder, salt, and remaining cinnamon.
  4. Add softened butter and egg to the dry ingredients. Mix with a fork, then add milk. Mix until just combined; do not overmix.
  5. Gently fold the diced apples into the batter.
  6. Pour batter into prepared pan and smooth the top.
  7. Bake for 25-30 minutes, or until a toothpick inserted into the center comes out clean or with moist crumbs.
  8. Let cool slightly and serve warm.

Notes

Do not freeze the finished cake as apples release moisture and make the texture mushy. You can freeze the batter instead. Use firm apples like Gala, Fuji, or Honeycrisp. Avoid overmixing the batter to prevent a dense cake. For a crumble topping, mix 1 tbsp flour, 1 tbsp sugar, and 1 tsp cold butter.
