Ingredients

  • 1 tablespoon (15ml) pure maple syrup (Grade B or Amber)
  • 1/2 teaspoon pumpkin pie spice
  • 2 ounces (60ml) vodka or bourbon
  • 1 tablespoon (15ml) heavy cream
  • Ice (large cubes preferred)
  • Ground cinnamon (for rimming)
  • Maple syrup (for rimming)

Instructions

  1. Chill martini or coupe glasses in the freezer for 10 minutes.
  2. Moisten the rim of the glasses with a lime wedge or paper towel, dip in maple syrup, and dust with ground cinnamon. Set aside.
  3. In a cocktail shaker, combine pumpkin puree, maple syrup, pumpkin pie spice, vodka (or bourbon), and heavy cream. Stir briefly to combine thick ingredients.
  4. Add a generous amount of ice to the shaker.
  5. Close tightly and shake vigorously for 15-20 seconds until the drink is chilled and frothy.
  6. Strain the mixture into the prepared glasses using a fine-mesh strainer if desired to catch small bits of pumpkin or spice.
  7. Garnish with a tiny sprinkle of cinnamon or a cinnamon stick.

Notes

Use 100% pure pumpkin puree, not pumpkin pie filling. Real maple syrup is essential for flavor. Shake vigorously to emulsify the pumpkin and cream. For a non-alcoholic version, substitute alcohol with cold water or unsweetened almond milk and add an extra teaspoon of maple syrup. For dairy-free, use coconut cream or oat cream.
