Instructions

  1. In a mixing bowl, combine the softened butter and brown sugar. Mix until well combined and smooth.
  2. Add the flour, cinnamon, nutmeg, cloves, cardamom, and salt. Mix until evenly distributed and the mixture resembles a thick, sandy paste.
  3. Transfer the batter to an airtight jar. It can be stored in the fridge for up to 3 months or frozen for up to 6 months.
  4. Heat water or apple cider until steaming (around 180°F/82°C), but do not boil vigorously.
  5. Scoop 1 to 2 tablespoons of the batter into a mug.
  6. Pour the hot liquid over the batter.
  7. Stir vigorously with a whisk or spoon for about 30 seconds until the batter is fully dissolved and the liquid is uniform.
  8. Pour in the dark rum and stir to combine.
  9. Top with whipped cream and garnish with a cinnamon stick if desired. Serve immediately.

Notes

The batter can be made ahead and stored in the fridge for up to 3 months or frozen for 6 months. For a non-alcoholic version, omit the rum and add a splash of vanilla extract or extra brown sugar syrup. Using aged dark rum provides better flavor than light rum. Ensure the butter is softened but not melted for the batter.
