  • 1/2 cup dark chocolate chips (70% cocoa) or chopped bar
  • 23 tablespoons maple syrup or agave nectar
  • 1 teaspoon pure vanilla extract
  • 23 tablespoons unsweetened almond milk
  • 1 pinch salt
  • Optional: 1/2 teaspoon instant espresso powder
  • Optional: Sea salt flakes for garnish
  • Optional: Chopped nuts (walnuts or pecans)

Instructions

  1. Cut avocados in half, remove pits, and scoop flesh into a bowl. Remove any brown spots or fibrous strings.
  2. Melt dark chocolate chips in the microwave in 30-second intervals, stirring in between, until just melted. Let cool for a minute. (Skip if using cocoa powder).
  3. Add avocado flesh, melted chocolate, maple syrup, vanilla extract, almond milk, and salt to a high-speed blender.
  4. Blend on high for 1-2 minutes, stopping to scrape down the sides, until the mixture is completely smooth and creamy with no green flecks.
  5. Taste and adjust sweetness or thickness by adding more sweetener or almond milk as needed.
  6. Spoon mousse into small bowls or glasses.
  7. Refrigerate for at least 30 minutes to allow flavors to meld and texture to firm up.
  8. Serve topped with sea salt flakes, chocolate shavings, or whipped coconut cream.

Notes

Ensure avocados are very ripe for a smooth texture. The mousse improves in flavor after chilling. Can be stored in the fridge for up to 3 days or frozen for up to 2 months. If using cocoa powder instead of chips, add a fat source like coconut oil to mimic creaminess.
