Description

A crispy, golden baked chicken parmesan made with almond flour and parmesan cheese instead of breadcrumbs. This low-carb, gluten-free dinner is ready in 30 minutes and delivers restaurant-quality flavor without the guilt.

  • 2 large boneless, skinless chicken breasts (approx. 1.5 lbs / 680g)
  • 1 cup fine almond flour (110g)
  • 1/2 cup finely grated parmesan cheese (50g)
  • 2 large eggs, beaten
  • 1 tbsp Italian seasoning
  • 1 tsp garlic powder
  • 1.5 cups marinara sauce (low-sugar)
  • 1.5 cups shredded low-moisture mozzarella cheese (170g)
  • 2 tbsp extra virgin olive oil
  • 2 tbsp fresh basil, chopped
  • Salt (pinch for eggs)

Instructions

  1. Preheat oven to 400°F (200°C). Line a baking sheet with parchment paper and place a wire rack on top.
  2. Place chicken breasts between plastic wrap and pound to an even 1/2-inch thickness. Pat dry with paper towels.
  3. In a shallow bowl, whisk together almond flour, grated parmesan, Italian seasoning, and garlic powder.
  4. Dip each chicken cutlet into the beaten eggs, letting excess drip off, then press firmly into the almond flour mixture to coat.
  5. Place coated chicken on the wire rack. Lightly brush tops with olive oil.
  6. Bake for 15 minutes or until internal temperature reaches 165°F (74°C).
  7. Remove from oven. Spoon 2-3 tablespoons of marinara sauce over each cutlet and top with 1/4 cup shredded mozzarella.
  8. Broil on high for 3-5 minutes until cheese is melted and bubbly. Watch closely to prevent burning.
  9. Let rest for 2 minutes, garnish with fresh basil, and serve immediately.

Notes

Use a wire rack to ensure air circulation and crispiness on all sides. Pound chicken to even thickness for uniform cooking. Use low-moisture mozzarella to prevent sogginess. Do not overcrowd the pan. Leftovers can be stored in the fridge for up to 4 days and reheated in the oven or air fryer.
