Description
A crispy, golden baked chicken parmesan made with almond flour and parmesan cheese instead of breadcrumbs. This low-carb, gluten-free dinner is ready in 30 minutes and delivers restaurant-quality flavor without the guilt.
Ingredients
- 2 large boneless, skinless chicken breasts (approx. 1.5 lbs / 680g)
- 1 cup fine almond flour (110g)
- 1/2 cup finely grated parmesan cheese (50g)
- 2 large eggs, beaten
- 1 tbsp Italian seasoning
- 1 tsp garlic powder
- 1.5 cups marinara sauce (low-sugar)
- 1.5 cups shredded low-moisture mozzarella cheese (170g)
- 2 tbsp extra virgin olive oil
- 2 tbsp fresh basil, chopped
- Salt (pinch for eggs)
Instructions
- Preheat oven to 400°F (200°C). Line a baking sheet with parchment paper and place a wire rack on top.
- Place chicken breasts between plastic wrap and pound to an even 1/2-inch thickness. Pat dry with paper towels.
- In a shallow bowl, whisk together almond flour, grated parmesan, Italian seasoning, and garlic powder.
- Dip each chicken cutlet into the beaten eggs, letting excess drip off, then press firmly into the almond flour mixture to coat.
- Place coated chicken on the wire rack. Lightly brush tops with olive oil.
- Bake for 15 minutes or until internal temperature reaches 165°F (74°C).
- Remove from oven. Spoon 2-3 tablespoons of marinara sauce over each cutlet and top with 1/4 cup shredded mozzarella.
- Broil on high for 3-5 minutes until cheese is melted and bubbly. Watch closely to prevent burning.
- Let rest for 2 minutes, garnish with fresh basil, and serve immediately.
Notes
Use a wire rack to ensure air circulation and crispiness on all sides. Pound chicken to even thickness for uniform cooking. Use low-moisture mozzarella to prevent sogginess. Do not overcrowd the pan. Leftovers can be stored in the fridge for up to 4 days and reheated in the oven or air fryer.
