  • 1 teaspoon baking powder
  • ½ teaspoon salt
  • ½ cup (100g) granulated sugar (for coating)
  • 2 tablespoons ground cinnamon
  • ½ teaspoon ground nutmeg
  • ¼ teaspoon ground ginger
  • ¼ teaspoon ground cardamom

Instructions

  1. Preheat oven to 350°F (175°C) and line two baking sheets with parchment paper.
  2. In a large bowl, beat the softened butter, white sugar, and brown sugar together on medium-high speed for 3-4 minutes until light and fluffy.
  3. Beat in the eggs one at a time, mixing well after each addition, then add the vanilla extract and scrape down the sides of the bowl.
  4. In a separate medium bowl, whisk together the flour, baking powder, and salt.
  5. Add the dry ingredients to the wet mixture on low speed and mix just until the flour disappears, being careful not to overmix.
  6. In a small bowl, mix the ½ cup sugar with the cinnamon, nutmeg, ginger, and cardamom to create the coating.
  7. Scoop about 1.5 tablespoons of dough, roll into a ball, and coat completely in the cinnamon-sugar mixture.
  8. Place cookies on the prepared baking sheets, about 2 inches apart.
  9. Bake for 10-12 minutes until edges are set and lightly golden, but centers still look slightly soft.
  10. Let cookies cool on the baking sheet for 5 minutes, then transfer to a wire rack to cool completely.

Notes

Ensure butter is softened, not melted, to prevent flat cookies. Do not overmix the dough once flour is added to maintain tenderness. For chewier cookies, slightly underbake them as they will firm up while cooling. Dough can be chilled for 30 minutes to 24 hours to deepen flavor and reduce spreading.
