  • 8 oz (225g) full-fat block cream cheese, softened to room temperature
  • 1 cup (120g) powdered sugar
  • 1 tsp vanilla extract
  • 1.5 lbs (680g) fresh strawberries, washed, hulled, and patted dry
  • 1 cup (150g) fresh blueberries, rinsed and patted dry
  • 1 cup (130g) fresh raspberries, rinsed and patted dry

Instructions

  1. Preheat oven to 350°F (175°C). Unroll the sugar cookie dough onto a parchment-lined 12-inch round pizza pan or baking sheet. Press out evenly and pinch any gaps.
  2. Bake the crust for 10-12 minutes until edges are lightly golden. Let it cool completely on a wire rack.
  3. In a mixing bowl, beat the softened cream cheese until smooth. Add powdered sugar and vanilla extract.
  4. Mix on low until combined, then beat on medium for 1-2 minutes until fluffy and spreadable.
  5. Spread the frosting evenly over the completely cooled crust using an offset spatula or spoon.
  6. Arrange sliced strawberries, blueberries, and raspberries on top in a patriotic pattern (stripes or mosaic).
  7. Chill in the refrigerator for at least 30 minutes to firm up the frosting.
  8. Slice into wedges with a sharp knife and serve.

Notes
