  • 1/4 cup shredded mozzarella cheese (25g)

  • 1/4 tsp black pepper
  • 1/2 tsp garlic powder
  • 1/4 tsp red pepper flakes

Instructions

  1. Pat the chicken breast dry with paper towels and season both sides with salt, pepper, and garlic powder. If thick, pound to 1/2 inch thickness.
  2. Heat olive oil in a 10-inch skillet over medium-high heat. Sear chicken for 3-4 minutes on the first side until golden brown, then flip and cook for 2-3 minutes. Remove chicken to a plate.
  3. Reduce heat to medium. Add minced garlic to the same skillet and sauté for 30-60 seconds until fragrant. Deglaze with a splash of water if needed to scrape up browned bits.
  4. Pour in heavy cream and add softened cream cheese. Whisk gently over low-medium heat until the cream cheese is melted and the sauce is smooth.
  5. Stir in drained artichoke hearts and simmer for 1 minute to thicken slightly.
  6. Add fresh spinach and stir until wilted. Return the chicken to the skillet, nestling it into the sauce. Spoon sauce over the chicken.
  7. Cover the skillet and simmer for 3-4 minutes until the chicken is cooked through (165°F).
  8. Remove lid, sprinkle mozzarella over the chicken, and let sit for 1 minute until melted and bubbly. Adjust seasoning and serve immediately.
