Ingredients

  • 1 lb bulk Italian sausage (mild or hot)
  • 2 lbs Yukon Gold potatoes, diced
  • 1 large yellow onion, diced
  • 4 cloves garlic, minced
  • 4 cups low-sodium chicken broth
  • 1/2 cup heavy cream
  • 2 tbsp butter
  • 1 tsp dried thyme
  • Salt and black pepper to taste
  • Optional: 1/2 cup shredded sharp cheddar or Gruyère
  • Optional: Chopped parsley or chives for garnish

Instructions

  1. Heat a large pot or Dutch oven over medium-high heat. Add the bulk Italian sausage, breaking it up with a wooden spoon. Cook for 5-7 minutes until deeply browned and crispy in spots.
  2. Remove the browned sausage with a slotted spoon and set aside, leaving the rendered fat in the pot.
  3. Reduce heat to medium. Add butter to the rendered fat. Once melted, add diced onions and cook for 3-4 minutes until translucent.
  4. Add minced garlic and dried thyme. Stir constantly for 1 minute until fragrant but not browned.
  5. Add diced potatoes and chicken broth. Stir to scrape up any browned bits (fond) from the bottom of the pot.
  6. Bring to a boil, then reduce heat to low. Cover and simmer for 15 minutes, or until potatoes are tender.
  7. Return the browned sausage to the pot. Stir in heavy cream and heat through for about 2 minutes. Do not boil vigorously.
  8. Taste and season with salt and black pepper as needed.
  9. Ladle into bowls and serve immediately with crusty bread.

Notes

The key to flavor is rendering the sausage fat and sautéing the aromatics in it. Do not over-stir the potatoes while simmering to maintain texture. If the soup is too thin, simmer uncovered or use a cornstarch slurry. If too salty, add a diced potato to absorb excess salt.
