- 3 large apples (approx. 600g), peeled or unpeeled, diced into ½-inch cubes (mix of Granny Smith and Honeycrisp)
- 2 medium pears (approx. 300g), diced into ½-inch cubes (Bosc or Anjou)
- 2 tablespoons lemon juice
- ½ cup granulated sugar
- 1 teaspoon ground cinnamon
- ½ teaspoon ground ginger
- ¼ teaspoon ground nutmeg
- 2 tablespoons cornstarch
- 1 cup all-purpose flour
- ½ cup old-fashioned rolled oats
- 1 cup packed brown sugar
- ½ cup cold unsalted butter, cubed
- ½ teaspoon flaky sea salt
Instructions
- Preheat oven to 375°F (190°C) and grease a 9×9 inch baking dish.
- In a large bowl, combine diced apples and pears.
- In a small bowl, whisk together granulated sugar, cinnamon, ginger, nutmeg, and cornstarch.
- Pour the spice mixture over the fruit, add lemon juice, and toss gently to coat evenly.
- In a medium bowl, combine flour, rolled oats, and brown sugar.
- Add cold cubed butter to the dry ingredients and rub in with fingers until the mixture resembles coarse crumbs with pea-sized butter chunks.
- Pour the fruit mixture into the prepared baking dish and spread evenly.
- Sprinkle the topping mixture loosely over the fruit without pressing down.
- Sprinkle flaky sea salt on top.
- Place the dish on a baking sheet and bake for 45-55 minutes, or until the topping is golden brown and the filling is bubbling.
- If the topping browns too quickly, cover loosely with foil for the last 10 minutes.
- Let the crumble cool for at least 15-20 minutes before serving to allow the filling to set.
Notes
Ensure butter is very cold for a flaky topping. Use a baking sheet underneath the dish to catch bubbling fruit juices. Let the crumble rest for 15-20 minutes before serving to prevent a runny filling. Can be made ahead by prepping filling the night before.
