  • 2 medium pears (approx. 300g), diced into ½-inch cubes (Bosc or Anjou)
  • 2 tablespoons lemon juice
  • ½ cup granulated sugar
  • 1 teaspoon ground cinnamon
  • ½ teaspoon ground ginger
  • ¼ teaspoon ground nutmeg
  • 2 tablespoons cornstarch
  • 1 cup all-purpose flour
  • ½ cup old-fashioned rolled oats
  • 1 cup packed brown sugar
  • ½ cup cold unsalted butter, cubed
  • ½ teaspoon flaky sea salt

Instructions

  1. Preheat oven to 375°F (190°C) and grease a 9×9 inch baking dish.
  2. In a large bowl, combine diced apples and pears.
  3. In a small bowl, whisk together granulated sugar, cinnamon, ginger, nutmeg, and cornstarch.
  4. Pour the spice mixture over the fruit, add lemon juice, and toss gently to coat evenly.
  5. In a medium bowl, combine flour, rolled oats, and brown sugar.
  6. Add cold cubed butter to the dry ingredients and rub in with fingers until the mixture resembles coarse crumbs with pea-sized butter chunks.
  7. Pour the fruit mixture into the prepared baking dish and spread evenly.
  8. Sprinkle the topping mixture loosely over the fruit without pressing down.
  9. Sprinkle flaky sea salt on top.
  10. Place the dish on a baking sheet and bake for 45-55 minutes, or until the topping is golden brown and the filling is bubbling.
  11. If the topping browns too quickly, cover loosely with foil for the last 10 minutes.
  12. Let the crumble cool for at least 15-20 minutes before serving to allow the filling to set.

Notes
