A moist, dense, and spiced apple cake that is easy to make in one bowl. Perfect for using bruised apples, this fall dessert is ready in under an hour and stays fresh for days.

- 2 cups (250g) all-purpose flour
- 1 cup (200g) granulated sugar
- 1/2 cup (100g) packed brown sugar
- 1 teaspoon baking powder
- 1/2 teaspoon baking soda
- 1/2 teaspoon salt
- 1 teaspoon ground cinnamon
- 1/4 teaspoon ground nutmeg
- 1/4 teaspoon ground ginger
- 1 cup (240ml) buttermilk
- 1/2 cup (120ml) vegetable oil
- 2 large eggs
- 1 teaspoon vanilla extract
- 3 medium apples (peeled and diced, approx. 750g)
- 1 tablespoon flour (for tossing apples)
Instructions
- Preheat oven to 350°F (175°C). Grease a 9×9 inch square baking pan and line with parchment paper if desired.
- In a medium bowl, whisk together the flour, baking powder, baking soda, salt, cinnamon, nutmeg, and ginger until uniform.
- In a second medium bowl, whisk together the eggs, granulated sugar, brown sugar, buttermilk, vegetable oil, and vanilla extract until smooth and slightly frothy.
- Pour the wet ingredients into the dry ingredients. Gently fold together with a spatula until just combined; do not overmix.
- Toss the diced apples in 1 tablespoon of flour to coat, then gently fold them into the batter.
- Pour batter into the prepared pan and smooth the top.
- Bake for 35-40 minutes, or until a toothpick inserted into the center comes out clean or with moist crumbs.
- Let the cake cool in the pan for 10 minutes, then transfer to a wire rack to cool completely before slicing.
Notes
Tossing apples in flour prevents them from sinking. Room temperature ingredients help the batter emulsify. Store in an airtight container at room temperature for up to 3 days. Do not freeze as apples may become mushy.
