Ingredients

  • 1 cup old-fashioned rolled oats (90g)
  • ½ cup natural peanut butter (120g)
  • 2 tablespoons unsweetened cocoa powder (15g)
  • 1 teaspoon pure vanilla extract
  • ¼ teaspoon kosher salt
  • ½ cup dark chocolate chips (85g)
  • 1 tablespoon coconut oil (optional)
  • Sea salt flakes (optional, for topping)

Instructions

  1. Prep the dates: If dates are dry, soak them in warm water for 10 minutes, then drain and pat them completely dry.
  2. Pulse dry ingredients: Add rolled oats and cocoa powder to a food processor and pulse until oats are broken down into a coarse meal.
  3. Blend into dough: Add dates, peanut butter, vanilla extract, and salt to the food processor. Blend until the mixture forms a thick, sticky ball that pulls away from the sides. Scrape down sides as needed.
  4. Roll the bites: Wet hands slightly with water or oil. Roll the mixture into 1-inch balls (yields about 20-24 bites) and place on a parchment-lined sheet pan.
  5. Melt chocolate: Microwave chocolate chips and coconut oil (if using) in 30-second intervals, stirring between each, until smooth. Alternatively, melt in a saucepan over low heat.
  6. Dip and set: Dip each bite into the melted chocolate, coating completely. Lift out, let excess drip off, and place back on the sheet pan. Sprinkle with sea salt flakes if desired.
  7. Chill: Place the sheet pan in the freezer for 10-15 minutes (or fridge for 30-45 minutes) to set the chocolate.

Notes

Ensure dates are completely dry before processing to prevent a sticky mess. If the mixture is too dry, add a teaspoon of water or another date. If too wet, add more oats. Chocolate burns easily, so melt gently. These freeze well for up to 3 months.
