These no-bake chocolate dipped date energy bites are a healthy, sweet, and satisfying snack made with pantry staples. Ready in under 20 minutes, they provide natural energy without a sugar crash.

- 2 cups pitted Medjool dates (300g)
- 1 cup old-fashioned rolled oats (90g)
- ½ cup natural peanut butter (120g)
- 2 tablespoons unsweetened cocoa powder (15g)
- 1 teaspoon pure vanilla extract
- ¼ teaspoon kosher salt
- ½ cup dark chocolate chips (85g)
- 1 tablespoon coconut oil (optional)
- Sea salt flakes (optional, for topping)
Instructions
- Prep the dates: If dates are dry, soak them in warm water for 10 minutes, then drain and pat them completely dry.
- Pulse dry ingredients: Add rolled oats and cocoa powder to a food processor and pulse until oats are broken down into a coarse meal.
- Blend into dough: Add dates, peanut butter, vanilla extract, and salt to the food processor. Blend until the mixture forms a thick, sticky ball that pulls away from the sides. Scrape down sides as needed.
- Roll the bites: Wet hands slightly with water or oil. Roll the mixture into 1-inch balls (yields about 20-24 bites) and place on a parchment-lined sheet pan.
- Melt chocolate: Microwave chocolate chips and coconut oil (if using) in 30-second intervals, stirring between each, until smooth. Alternatively, melt in a saucepan over low heat.
- Dip and set: Dip each bite into the melted chocolate, coating completely. Lift out, let excess drip off, and place back on the sheet pan. Sprinkle with sea salt flakes if desired.
- Chill: Place the sheet pan in the freezer for 10-15 minutes (or fridge for 30-45 minutes) to set the chocolate.
Notes
Ensure dates are completely dry before processing to prevent a sticky mess. If the mixture is too dry, add a teaspoon of water or another date. If too wet, add more oats. Chocolate burns easily, so melt gently. These freeze well for up to 3 months.
