  • 2 lbs (900g) boneless, skinless chicken breasts
  • 1 cup (240ml) Frank’s RedHot Sauce
  • 4 tbsp (60g) unsalted butter
  • 1 tsp garlic powder
  • 1/2 cup (120ml) blue cheese dressing
  • 1 tbsp ranch dressing (optional, to mellow blue cheese)
  • 1215 small slider buns (Hawaiian or potato rolls)
  • 1 cup chopped celery
  • 1 cup chopped carrots
  • 1 head romaine lettuce, chopped
  • Salt and black pepper to taste
  • 1 bay leaf (optional, for poaching)

Instructions

  1. Place chicken breasts in a large pot and cover with cold water by an inch. Add a pinch of salt and a bay leaf if desired.
  2. Bring to a boil, then immediately reduce to a simmer. Cover and cook for 12-15 minutes until internal temperature reaches 165°F (74°C).
  3. Remove chicken from heat and let it rest in the water for 5 minutes to retain moisture. Shred or pulse the chicken into bite-sized pieces.
  4. While chicken rests, melt butter in a medium saucepan over low heat. Whisk in Frank’s RedHot sauce, garlic powder, and a pinch of black pepper. Simmer gently for 2 minutes.
  5. Place shredded chicken in a large bowl and pour the warm buffalo sauce over it. Toss gently until every piece is coated.
  6. Chop celery and carrots into sticks. Wash and dry romaine lettuce thoroughly.
  7. Mix blue cheese dressing with ranch (if using) and store in a small container.
  8. For immediate serving: Assemble sliders by splitting buns, adding chicken, lettuce, and drizzling with dressing.
  9. For meal prep: Store chicken mixture, buns (in a plastic bag), and veggies in separate containers to prevent sogginess.

Notes

Keep components separate for meal prep to avoid soggy buns. The chicken mixture freezes well for up to 3 months, but do not freeze assembled sliders. Reheat chicken with a splash of water to maintain moisture. Toast buns lightly before assembling for better texture.
