A versatile and flavorful meal prep recipe for Buffalo Chicken Sliders that allows you to batch-cook spicy chicken and sauces for game day parties or high-protein lunches throughout the week.

- 2 lbs (900g) boneless, skinless chicken breasts
- 1 cup (240ml) Frank’s RedHot Sauce
- 4 tbsp (60g) unsalted butter
- 1 tsp garlic powder
- 1/2 cup (120ml) blue cheese dressing
- 1 tbsp ranch dressing (optional, to mellow blue cheese)
- 12–15 small slider buns (Hawaiian or potato rolls)
- 1 cup chopped celery
- 1 cup chopped carrots
- 1 head romaine lettuce, chopped
- Salt and black pepper to taste
- 1 bay leaf (optional, for poaching)
Instructions
- Place chicken breasts in a large pot and cover with cold water by an inch. Add a pinch of salt and a bay leaf if desired.
- Bring to a boil, then immediately reduce to a simmer. Cover and cook for 12-15 minutes until internal temperature reaches 165°F (74°C).
- Remove chicken from heat and let it rest in the water for 5 minutes to retain moisture. Shred or pulse the chicken into bite-sized pieces.
- While chicken rests, melt butter in a medium saucepan over low heat. Whisk in Frank’s RedHot sauce, garlic powder, and a pinch of black pepper. Simmer gently for 2 minutes.
- Place shredded chicken in a large bowl and pour the warm buffalo sauce over it. Toss gently until every piece is coated.
- Chop celery and carrots into sticks. Wash and dry romaine lettuce thoroughly.
- Mix blue cheese dressing with ranch (if using) and store in a small container.
- For immediate serving: Assemble sliders by splitting buns, adding chicken, lettuce, and drizzling with dressing.
- For meal prep: Store chicken mixture, buns (in a plastic bag), and veggies in separate containers to prevent sogginess.
Notes
Keep components separate for meal prep to avoid soggy buns. The chicken mixture freezes well for up to 3 months, but do not freeze assembled sliders. Reheat chicken with a splash of water to maintain moisture. Toast buns lightly before assembling for better texture.
