  • 1 cup (240ml) water (filtered or tap water left out to remove chlorine)
  • 2 tbsp (15g) whole wheat flour (optional, recommended for first few days)

Instructions

  1. Day 1: In a clean glass jar, combine ½ cup (60g) all-purpose flour and ½ cup (120ml) water. Stir vigorously until the mixture resembles thick pancake batter. Cover with a cloth or paper towel secured with a rubber band. Let sit at room temperature for 24 hours.
  2. Day 2: Check for bubbles and smell. It should smell like sour milk or yogurt. Stir the mixture, discard half (about ¼ cup), and add ½ cup flour and ½ cup water. Stir well, cover, and wait 24 hours.
  3. Day 3: The starter should be bubbly. Stir, discard half, and feed with ½ cup flour and ½ cup water. You may notice a slight rise.
  4. Day 4: Feed with ½ cup flour and ½ cup water. Watch closely for the next 4-6 hours. The starter is ready to peak when it doubles in size and is domed on top.
  5. Days 5-7: Continue daily feeding (discard half, add ½ cup flour, ½ cup water). By Day 5, the starter should be predictable, rising in 4-6 hours with a tangy, yeasty smell. If not doubling by Day 7, continue feeding; it may take up to 10 days.
  6. Maintenance: Once active, store in the fridge and feed once a week, or keep at room temperature and feed daily.

Notes

Use water that is around 75-80°F (24-27°C) for best yeast activity. If using tap water with chlorine, let it sit out for an hour. Do not use self-rising flour. The ‘hooch’ (gray liquid) on top indicates hunger; stir it back in or pour it off before feeding. This starter is naturally dairy-free.
