A quick, sticky, and spicy salmon recipe using center-cut chunks marinated in a sweet and savory honey-sriracha glaze. Perfect for busy weeknights and meal prep.

- 2 lbs center-cut salmon chunks or steaks
- 1/4 cup honey
- 2–3 tbsp sriracha sauce
- 2 tbsp soy sauce or tamari
- 3 cloves garlic, minced
- 1 tsp fresh grated ginger (or 1/2 tsp powder)
- 1 tbsp lemon juice (divided)
- 2 stalks green onions, sliced
Instructions
- Pat salmon dry with paper towels and cut into 1-inch cubes. Place in a large mixing bowl.
- In a small bowl, whisk together honey, sriracha, soy sauce, minced garlic, grated ginger, and half of the lemon juice.
- Pour glaze over salmon and toss to coat evenly. Let marinate at room temperature for 10 minutes.
- Preheat oven to 400°F (200°C). Line a baking sheet with parchment paper and lightly spray with oil.
- Arrange salmon bites in a single layer on the baking sheet, ensuring they are not touching.
- Bake for 12-15 minutes until salmon flakes easily with a fork and edges are caramelized.
- Remove from oven, drizzle with remaining lemon juice, and sprinkle with sliced green onions. Serve immediately.
Notes
Do not overcook the salmon; it continues to cook slightly after removal from the oven. Use parchment paper to prevent the sticky honey glaze from burning. For a spicy peanut variation, add 1 tbsp peanut butter to the glaze. For a vegan option, substitute firm tofu for salmon.
