  • 2 tbsp (30ml) extra virgin olive oil
  • 2 tbsp (10g) smoked paprika
  • 1.5 tsp (3g) garlic powder
  • 0.5 tsp (1g) onion powder
  • 1 tsp (6g) sea salt, divided

Instructions

  1. Rinse the chickpeas under cold running water in a colander for 30 seconds to remove the starchy liquid (aquafaba). Shake off excess water.
  2. Spread the chickpeas on a clean kitchen towel. Pat them dry thoroughly, picking through to remove any loose skins or wet chickpeas. This step is crucial for crispiness.
  3. Place the dried chickpeas in a large mixing bowl. Drizzle with olive oil and sprinkle with smoked paprika, garlic powder, onion powder, and half of the salt. Toss well until every chickpea is coated and looks slightly glossy.
  4. Preheat the air fryer to 390°F (200°C).
  5. Add the chickpeas to the air fryer basket in a single layer. Do not overcrowd; cook in batches if necessary. Cook for 5 minutes, then shake the basket or stir the chickpeas.
  6. Continue cooking for another 5-7 minutes, watching closely. They are done when golden brown and sound hollow when tapped. Remove immediately to prevent burning.
  7. Transfer the hot chickpeas to a cooling rack or plate. Sprinkle with the remaining salt while hot. Let them cool completely before eating to ensure maximum crunch.

Notes

Do not add salt before cooking, as it draws out moisture and prevents crisping. Ensure chickpeas are completely dry before oiling. If garlic powder burns, lower temperature to 375°F (190°C). Store in an airtight container at room temperature for up to 5 days; do not refrigerate.
